Broccoli Cheese Soup
1/2lb.broccoli, chopped
1 3/4c. water
salt
2Tbsp. minced onion
1/4c. melted butter
3 Tbsp.flour
3 1/2 c. evaporated milk
4 c. skin milk
3 1/4 c.shredded cheddar cheese
pepper

Cook broccoli until tender. Drain . Cook onion in butter until tender. Blend in flour ,add milks and cook and stir until smooth and thicked. Add cheese and broccoli and season to taste with salt and pepper. Stir until cheese is melted.Do not boil. 8 sevings.
