cream of mushroom soup with bacon and garlic
1lb fresh mushrooms sliced
1 pint heavy cream
1package bacon
1 carton chicken stock
2 cloves fresh garlic minced
pepper to taste
cut bacon strips into 1 inch pieces
brown bacon in dutch oven or heavy pot. remove bacon and fat drain bacon on paper towels.
brown garlic in same pot add muchrooms and stock cook over med heat for about 45 minutes
add cream and pepper simmer another 1/2 hour add bacon just before serving. If you want a
slightly thicker soup add a teaspoon of cornstarch to 1/3 cup cold milk and add when you
add the cream.
