Donnie-OK Potato Soup
I am not good at measures when it comes to soups. I just throw together. This is our
favorite and one that came about because I had to stretch what I had fixed when company
came in.
Peel and cube about 2 qts of potatoes, add chopped onion to taste. Add water to just
barely cover potatoes and cook till tender. DO NOT drain. Turn burner to lowest setting,
slice velvetta cheese, (I use at least 1/2 to 3/4 lb). Let it melt thru the potatoes and
add 2 cans mushroom soup. Heat thru and enjoy.
This makes a thick cheesy potato soup.
