Pasta Fagioli
2 T. butter
1/2 lb. (2 c.) chopped cooked ham
1/2 c. chopped onion
2 cloves garlic minced
3 c. chicken broth (or 2 cans)
3 1/2 c. (28 oz. can) tomato sauce
3 c. (two 15-oz. cans) Great Northern beans, undrained
1/4 c. chopped fresh parsley
1 bay leaf
1 c. small pasta, uncooked
salt and pepper to taste (watch the salt)In large pot over medium heat, melt butter; add ham, onion and garlic. Cook, stirring occasionally, until onion is tender. Stir in broth, loosening brown bits from bottom of pan. Add tomato sauce, beans, parsley, bay leaf, salt (if needed) and pepper. Heat to boiling. Add uncooked pasta; cook about 14 min, stirring frequently, until pasta is tender.
