Oh Potato soup is one of my absolute favorites!!!
These are my family's favorites!
Potato Leek Soup
In a Dutch Oven saute 3-4 chopped leeks and 1 clove crushed garlic slowly in about 1-2 Tbs
of Olive oil. Slowly cook the leeks til the the garlic starts browning. Add about 8 cups
of diced potatoes (you might need a bit more or less depending on your pan) Add water to
cover potatoes. Add 1 Tbs of Knorr Chicken Broth paste (or 2 boullion cubes). Bring to
boil then simmer til potatoes are tender. Remove about a 2 cups of potatoes (No broth) and
mash with fork. Add cream (Or milk) to make a thick mashed potato mixture and add back to
soup. This should thicken up the soup enough if not repeat process.
Another variation that is well liked here is to cook bacon in the dutch oven til crisp...
remove bacon and add 2 chopped onions... remaining recipe is the same.... when serving
soup crumble the bacon on top.
