STUFFED PEPPER SOUP
2 lbs ground beef
1 (28oz) can tomato sauce
1 (28oz) can diced tomatoes, undrained
2 cups cooked converted or long grain white rice ( I just use Minute Rice)
2 cups chopped green pepper
2 beef bouillen cubes
¼ cup packed brown sugar
2 tsps. Salt
1 tsp pepper
In a large pan or dutch oven, brown the ground beef ; drain. Add remaining ingredients;
bring to a boil. Reduce heat; cover and simmer for 30-40 minutes until peppers are tender.
Yield: 10 servings (not big eaters apparently!!)
*I add onions or onion powder, garlic powder and some chili powder, just add how much you
want to. It is thick also, can add water to thin it, or could be used as spanish rice.
