CHRISTMAS HOMINY CASSEROLE
2 cups canned yellow hominy, drained and rinsed in cold water
1 cup canned cream of mushroom soup
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
Cornflakes rolled into crumbs
1 tablespoon butter
1/2 lb fresh mushrooms, sliced and sauteed in butter (optional)
3 tablespoons heavy cream (optional)Mix hominy, mushroom soup, Worcestershire sauce, and salt. Pour into a buttered casserole, sprinkle with the crushed cornflakes and dot with butter. Bake at 300° until brown.
For a richer casserole, add fresh mushrooms and heavy cream to the mixture before pouring into the casserole.
YIELD: 6 servings.
