Creamy Potatoes
8 potatoes, peeled and thinly sliced
1 sm onion finely chopped (optional)
1 can cheddar cheese soup, undiluted
1 cup sour cream
salt and pepper to taste

Put potato slices in a greased casserole dish. Mix soup and sour cream, pour over potatoes. Add salt and pepper. Stir to coat. Bake, covered at 350 for 60-75 minutes. Uncover and bake 10 minutes longer.
