GREEN BEANS & FRIENDS (serves 6)
1 1/4 lbs fresh green beans, trimmed
Salt to taste
4 slices bacon
2 shallots, minced (I've substituted minced green onions)
1 cup sliced mushrooms
1/4 tsp salt
1/8 tsp pepper

Blanch the beans in salted boiling water for 5 minutes. Plunge into ice water to stop cooking & drain. Saute the bacon in a skillet until crisp. Remove the bacon from the skillet, reserving the drippings. Drain the bacon & chop into small pieces.
Saute the shallots in the drippings until soft. Add teh mushrooms & saute until tender. Add the drained green beans & cook until done to taste. Season w/salt & pepper. Sprinkle w/chopped bacon.
