Herb Roasted Vegetables

5 baby potatoes cut into 1 inch cubes
or 2 med. sweet potatoes
3 carrots cut into 1 inch pieces
1 med. onion (red or white quartered)
1 1/2 tbsp. canola or olive oil
3 cloves garlic, minced (or dried)
1/2 tsp. of each- thyme,Italien seasoning,oregano
1/4 tsp. salt
1/4 tsp. pepper

-Place potatoes, carrots, onion in a 13x9 baking pan. Combine oil, garlic mixed herbs, salt and pepper.
Drizzle over vegetables tossing to coat.
-Cover with foil, Bake in a 425 oven for 45 min.
-Remove foil stir vegetables.
-Bake uncovered for 15 min. until tender.
