To help deal with portions, not too much or too little, we started serving twice baked
potatoes years ago. One-half a potato per person with a couple of extras for seconds. Bake
potatoes, scoop insides into big bowl. Mix with butter until the white potato turns
yellow. Then add sour cream until it turns white again. Salt and pepper to taste. These
days I add roast garlic to the potatoes. Put back into the skins. Can be done a couple of
days before. Don't worry about the calories, it's the holidays. For the rest of the year,
chicken broth instead of butter and nonfat sour cream. Hardly worth it without the butter.
