Mushroom Medly

2 tsp Asian sesame oil
1 red bell pepper, cut in srips
1 1/2 Tbs minced garlic
8 oz shiitake mushrooms, sliced
8 oz button mushrooms, sliced
4 oz small oyster mushrooms
10 oz package fresh spinach leaves, stems trimmed
6 green onions, cut in thin strips
1 Tbs soy sauce

Heat oil in skillet, saute first three ingredients for 1 minute. Add mushrooms, saute until brown and tender, adding 2-3 Tbs water if pan gets dry, cooking about 10 minutes. Add spinach and onion, stir until spinach wilts, about 2 minutes. Stir in soy sauce, season with salt and pepper to taste.
