Onion Pie (this is best prepared with yellow onions (I use 1015 onions myself)

1 cup saltines - crushed
5 T butter melted
2 1/2 cups onions, thinly sliced
2 T oil
2 eggs
3/4 cup milk
salt & pepper to taste
1/4 c shredded cheddar cheese (I use more myself)

Preheat oven to 350. Combine cracker crumbs and butter together and press into pie pan. (I use a glass one, but you don't have to). Bake 8 minutes.(glass pans take a couple minutes longer) Saute onions in oil until tender. Place in cracker crust shell. Mix remaining ingredients, EXCEPT cheese. Pour over onions. Top with cheese and bake for 45 minutes. Serves 6.

I have doubled and tripled this and it always comes out delicious!
