RICE AND VEGETABLES
1 box of Arborio rice mix
3 cups of vegetable broth
olive oil (about a tablespoon)
butter (to taste or can be omitted)
chopped or minced onion (to taste)
1 zucchini, sliced
1 tomato, cut into wedges
parmesan cheese
Slice the zucchini and wedge the tomato. Marinate in olive oil and vinegar overnight in the refrigerator.

The next day:

Prepare the rice. First sautee the onion in the olive oil and butter. Add the rice. Add 1 cup of vegetable broth (heated). Stir until liquid is absorbed. Repeat for second and third cups.

Meanwhile, steam the tomatoes and zucchini, covered, in a covered dish in the microwave.

When rice is done, pour into a casserole dish. Combine with the tomato and zucchini.

Sprinkle parmesan cheese on the top.
