Garlic Roasted Potatoes
2 1/2-3 lb sm potatoes, rinsed & quartered, skins on
1/4 c. oil
1 head garlic, sliced in half crosswise & separated
1/2 tsp. salt
1/2 tsp. pepper
Heat oven to 450. Place spuds in 9x13. Cover spuds w/oil, garlic, s&p; mix to coat spuds. Bake 50-60 mins, turning occasionally. Discard garlic before serving.

Spiced Red Potatoes
1 1/2 lbs sm red potatoes
2 tsp. cumin
1 tsp. oregano
3/4 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. crushed red pepper flakes
3 T. butter
Remove 1/4" wide strip of peel from around center of each spud. In lg pot combine spuds w/enough salted water to cover; bring to a boil. Cook spuds for 15 mins; drain & set aside. Heat same pot over med-low heat til dry. Add spices; cook til fragrant, 30 secs. Add butter, stir til melted & combined w/cumin mixture. Add reserved spuds, toss to coat. Transfer to bowl.
