SCALLOPED FRESH TOMATOES
1 cup fine bread crumbs
1/4 cup grated Parmesan
1 cup chopped onion
1 TBL butter
6 tomatoes, peeled, sliced
Sugar to taste
Salt & pepper to taste
1 TBL butter

Combine the crumbs & cheese in a bowl & mix well. Saute the onion
in 1 TBL butter in a skillet until tender. Let stand until cool. Layer
the tomatoes, sugar, salt, pepper, onion mixture
& bread crumb mixture alternately in a buttered 1 1/2 qt baking
dish until all the ingredients are used, ending with the bread crumb
mixture. Dot with 1 TBL butter. Bake in preheated
400 oven for 35 minutes. Serves 6-8.
