Veggie Mashed Potatoes

3 lbs potatoes,peeled and quartered
1 TSP salt
4 cloves garlic
2 TBS butter, divided
4 carrots, shredded
1 bunch scallions, sliced
1 cup milk

Boil water. Add potatoes, garlic, and salt. Boil 20 minutes. Meanwhile saute carrots in 1 TBS butter 3 minutes. Add scallions and saute for 1 minute. Set aside. Drain potatoes and garlic. Place in a bowl with the remaining butter. Beat, adding milk til smooth. Fold in veggie mix and salt and pepper if desired.
