Zucchini Patties
2 small/med Zucchini, grated
1 small onion grated
2 eggs
2-3 tablespoons flour
salt and pepper
Beat eggs pour over grated zucchini and onions mix, add flour, salt and pepper.
Heat pan with oil. put in a spoonful and spread out, You want these to cook well. cook on both sides until nice and brown. server plain or with a tomato gravy.
Tomato gravy:
1 can tomato sauce
1 can mushroom soup
Salt and pepper
mix well heat in sauce pan pour over Zucchini patties.
