Swedish meatballs
2 lbs. ground beef
1/4 minced onion (can be dried-spice jar kind)
3/4 c. soft bread crumbs (also can be dried prepared kind)
2 eggs lightly beaten
1 tsp salt
dash pepper
1/8 tsp nutmeg (I sometimes omit this as DH prefers w/o)
2 cans beef consume soup
3 T. butter or margarine
3 T. flour
Mix all ingredients until soup, form into meatballs and brown. I make large
meatballs for meals and smaller ones for cocktail meatballs.
Drain grease. In same pan melt 3 T butter. Mix in 3 T. flour and stir til
dissolved. Mix in 2 cans soup. Bring to boil. Dump meat balls back into mixture
and simmer for 1 hr.
