Bacon Cornbread
Ingredients:
1 1/2 cups Yellow Cornmeal
1/2 cup All-Purpose Flour
1/4 cup Bacon Fat
1 1/2 cups Buttermilk
2 tsp. Baking Powder
1 tsp. Sugar
1/2 tsp. Salt
1/2 tsp. Baking Soda
4 Slices Bacon, Crisp
2 Eggs
Directions:
Heat oven to 450*. Grease 18 corn stick pans. Mix all ingredients; beat
vigorously 30 seconds. Pour into pans, about 7/8 full. Bake 15 minutes or until
golden brown. Serve warm.
