Green Tomato Bread
8 - 10 medium green tomatoes
2/3 c. raisins
2/3 c. boiling water
2/3 c. shortening
2 2/3 c. sugar
4 eggs
3 1/3 c. flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 tsp cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
2/3 c. pecans or walnuts, chopped
Peel and core tomatoes. Discard seeds. Run cut-up pieces through blender until
smooth and creamy. You should have 2 cups pulp. Set raisins to soak in boiling
water and set aside to cool. In large bowl, cream shortening and sugar until
fluffy. Add eggs, tomato pulp and plumped raisins and water in which they were
soaked. Beat well. In another bowl, combine flour, soda, salt, baking powder,
spices and nuts. Add, one cup at a time to mixture in large bowl, stirring well
after each addition. Divide batter into two 9 x 5 greased loaf pans and bake in
350 degree oven 60 - 70 min
