Lefsa
this is my friend Adelle's recipe~
2 cups flour
4 tablespoons melted butter or margarine
2 cups mashed potatoes
1/2 tsp salt
combine and mix very well. Knead a bit and divide into golf ball size balls,
roll them very thin and then toast lightly on a lefsa iron or cast iron skillet
over medium heat, both sides.
Adelle says this recipe is richer~
7 cups mashed potatoes
1 cup heavy cream
1 tbsp salt
1/2 cup butter
2cups flour
1 tbsp sugar
chill all ingredients, blend the flour and butter as for pastry. Combine the
potatoes with the cream, sugar and salt. Add the flour and butter mixture.
handling very carefully, roll very thin. Toast lightly on a cast iron skillet hot
lefsa iron, both sides.
