Light Flaky Biscuits

Preheat oven to 450°
Combine
2 cups flour
4 1/2 tsp baking powder
1/2 tsp salt

Cut in 3 tbsp butter (cold works best) to the consistency of oatmeal.
In a measuring cup place 3 tbsp sour cream and then add cold milk to make one cup. Blend lightly.
Pour the milk mixture into a 'well' in the flour mixture. Combine with a fork until the mixture forms a ball in the bowl. Turn out on a floured surface and knead lightly 10 times. Pat or roll to 1/2 inch thick. Cut into circles with a biscuit or cookie cutter, place on a baking sheet and bake in a hot oven for 12-15 minutes untill golden.

Overworking the dough will make the biscuits tough.
