Pita Bread
Ingredients:
6 cups Whole wheat flour
2 teaspoons Salt
1/2 teaspoon Dry yeast
2 teaspoons Brown sugar
3 cups Warm water (not above 120F.)
Directions:
In a large bowl, sift together the flour and salt. In another bowl mix the yeast
together with the sugar and 1 cup of the water. Let the mixture stand for 5
minutes to "proof" or become foamy. Gradually fold this together with
the flour mixture. This will be sticky. Cover with cling wrap and let stand for
10 minutes. Knead the dough on a well-floured surface, adding more flour as
needed until dough becomes elastic. Divide the dough into 10 equal portions.
Roll each portion into an 8-inch circle. Place the rounds on a well-floured
surface. Brush the tops with oil and let rise covered for 1 hour. Preheat the
oven to 475F. Bake each round for 12 to 15 minutes, until puffed or lightly
golden.
