CHOCOLATE PECAN PIEChocolate Pecan Pie
3 large eggs
1/2 cup dark brown sugar
1 cup white sugar
3/4 cup dark Karo syrup
1 tsp. vanilla
2 Tablespoons sweet butter
2 ounces bourbon
4 ounces semi-sweet chocolate
1/4 cup shelled pecans
1 (9-inch) unbaked deep dish pie crust
In a large bowl, mix together eggs, dark brown sugar and white sugar, syrup and
vanilla. Set aside.
In a double boiler, melt butter, bourbon, and chocolate together. Allow to cool
down about 2 minutes. Fold chocolate mixture into egg mixture. Add pecans and
pour into pie crust. Bake at 350 degrees for 45 to 55 minutes or until knife
inserted halfway between center and edge comes out clean.
