Fresh Apple Cake

Serves 6 to 8

Ingredients:

• 1 cup all-purpose flour
• ½ teaspoon salt
• 1 teaspoon baking soda
• 2 cups cored, peeled and diced apples (Golden Delicious, Gala, Braeburn, or Granny Smith)
• 1 egg
• ¼ cup vegetable oil
• 1 cup sugar
• 1 teaspoon ground cinnamon
• 1 teaspoon ground nutmeg
• ½ cup chopped walnuts
• Confectioner's sugar, for dusting

Directions:

Preheat the oven to 350 degrees. Lightly grease an eight-inch square baking pan. In a large mixing bowl, sift together the flour, salt and baking soda. Place the diced apples in a medium mixing bowl. Break the egg over the apples. Add the oil, sugar, cinnamon, nutmeg, and nuts. Blend thoroughly by hand, about 1 minute. Stir the flour mixture into the apple mixture and mix just until the flour is moist. The batter will seem a bit dry.

Spread the batter into the prepared pan. Bake for 30 to 35 minutes, until a toothpick inserted into the cake comes out clean. Remove cake from the oven and cool for 10 minutes in the pan. Turn out onto a serving plate and sift confectioner's sugar over the top.
