Evelyn’s Famous Chicken Pot Pie
4 chicken breasts (cooked until tender and cut in bite size pieces, no bones)
(about 2 cups of chicken)
1 can Cream of Chicken Soup
1 can Cream Of Celery Soup
1 cup chicken broth
1 cup self-rising flour
1 cup milk
1 pkg. (16 oz) frozen mixed vegetables
1 tsp. Baking Powder
1 stick margarine, melted
Boil chicken till tender, take off the bones, can use other parts of chicken
besides the breast, line the bottom of a 9x13” pan or dish with the chicken
bite size pieces. Top with frozen vegetables. Mix soups with broth and pour over
the above layers. Mix flour, baking powder, milk and oleo and pour this over the
top of mixture (will be thin but rises about ˝”) Bake at 350° for 40 minutes
or until golden brown.
