Sausage and Rice Casserole
1 1/2 pounds spicy Italian sausage slices 1/2 inch thick
4 cups cooked brown rice
1 red pepper diced
1 green pepper diced
4 ribs of celery diced
4 cloves of garlic chopped fine
3 green onions sliced (green and white parts)
1 cup frozen corn
2 cups tomato juice (or V8)
brown sausage in a dutch oven add garlic in the last minute or two. Add cooked
rice and veggies pour tomato juice over and cover. Cook over med low heat for
20-30 minutes.
