Zucchini Casserole

6 fresh tomatoes, sliced
8 cheese slices(I use grated cheddar or colby instead)
1 medium onion, chopped
1/2 cup raw rice or 2 cups cracker crumbs
6 cups sliced zucchini
salt and pepper

In a casserole, arrange the 1/2 of the zucchini, 1/2 of the tomatoes ,all of the onion, all of the rice or crumbs,1/2 of the cheese. repeat the layers ending with cheese on top. Add a little water or tomato juice and few dots of butter. Cover and bake at 350, for 1 hour and 15 min or until tender.
