German Chocolate Oatmeal Cookies
1 cup plus 2 tbls. butter
2 cups packed light brown sugar
2 eggs
3 cups quick cooking oats
2 1/2 cups all-purpose flour
2 tsps. vanilla extract
1 tsp. baking soda
1 tsp. salt
2 cups chopped pecans
1-14oz can sweetened condensed milk
1-12oz pkg. semisweet chocolate chips
1/2 cup shredded coconut
In a large bowl cream the butter & 1 cup of brown sugar. Add the eggs one at
a time, beating well after each addition. Add the oats, flour, 1 tsp. of
vanilla, baking soda & salt. Mix in 1 cup of the pecans. Set the mixture
aside.
In the top of a double boiler over simmering water combine the milk, &
chocolate, stirring constantly until the chocolate melts. Add the remaining
pecans, coconut, 2 tbps. of butter, and 1 tsp. of vanilla. Blend well. Spread
2/3 of the oat mixture into a 10x15" baking pan. Spread the chocolate
mixture over the first layer. Crumble the remaining oat mixture over the
chocolate layer. Bake at 350 for 25 minutes. Let the cookies cool before baking.
