Santa's Whiskers

The whiskers are the shreds of coconut that give these cookies their name. This is a treat that was famous in the 1970's

3/4 cup butter or margarine
3/4 cup sugar
1 Tablespoon milk
1 teaspoon vanilla
2 cups all purpose flour
3/4 cup finely chopped candied red and green cherries
1/3 cup finely chopped pecans
3/4 cup shredded coconut

In a large mixing bowl beat the butter or margarine with an electric mixer on medium to high speed for 30 seconds.
Add the sugar and beat until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flours by hand. Stir in candied cherries and pecans Shape into two 8 inch long rolls. Roll in coconut. wrap in plastic wrap or waxed paper and chill for 2 to 24 hours.
Cut rolls into 1/4 thick slices. Place slices 1 inch apart on ungreased cookie sheets. Bake at 375 for 8 - 10 minutes or until edges are golden brown. Transfer cookies to wire racks. let cool. Makes about 60 cookies!
