Shortbread Cookies

Combine ( I use a mixer)
1 cup softened butter (room temp)
1/2 cup sugar
1 egg 1 1/2 tsp vanilla
Stir in with a spoon
2 1/4 cups flour. Knead gently, roll to about 1/4 inch thick and cut. Bake at 350 for about 18 minutes or untill the edges begin to brown.
Decorate with sprinkles before baking, or icing after they are cooled, or leave them plain.

My dad use to make Scotch shortbread with us kids on Christmas eve when I was a kid. His recipe was similar but it was all in pounds not cups. He would gently knead in the flour just until the dough began to crack. Then he would take pieces about the size of a tennis ball ? and roll it into a circle about 6 or 7 inches across. He would flute the edges and then mark the circle into sixths like a little pie. After baking he would cut the cookies apart.
