Spicy Pumpkin Bars
This recipe is kind of like pumpkin pie in a bar form. However, it adds an extra
bonus: spicy caramel frosting. Makes 9-16 bars, depending how big you cut them.
¾ cup sugar
¼ cup margarine, at room temp
1 egg, at room temp
¾ cup pumpkin
1 teaspoon vanilla
1 ¼ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground cloves
¼ cup chopped walnuts
Spice Frosting:
¼ cup brown sugar
3 Tablespoons butter or margarine
2 Tablespoons milk
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground cloves
¼ teaspoon vanilla
1 cup powdered sugar, sifted
Preheat oven to 375° Grease a 9”x9”x2” baking pan.
Cream sugar and margarine. Beat in egg, pumpkin, and vanilla. Stir together
flour, baking soda, salt, and spices. Add to creamed mixture; mix just until
blended. Stir in nuts.
Spread in pan. Bake 17-20 minutes. Cool slightly; cut into bars.
Spice frosting: In a saucepan, combine sugar, butter, milk and spices.
Cook and stir until mixture bubbles. Remove from heat; stir in vanilla. Slowly
beat in powdered sugar until frosting is of spreading consistency.
