Tofu Custard trifle
2 Harry and David low fat lemon loafs
1 package firm tofu (water drained)
juice of one lemon
2 or 3 packets of equal
fresh strawberries, blueberries and Kiwi fruit.
Slice lemon loaf 1/2 inch thick and leave on a plate to dry out (about 1 hour)
in a blender or food processor blend until smooth tofu, lemon juice and
sweetener
when loaf is dry place 1/2 of the slices on the bottom of a pretty bowl. Layer
1/2 the tofu mix and arrange 1/2 the fruit layer the rest of the loaf, tofu
custard and the rest of the fruit. refrigerate for at least 1 hour before
serving.
