Cucumber Salad
1 long english cucumber
1 large white onion
1/3 cup unflavored rice vinegar
2 packets of Equal sweetener
1/2 tsp. white pepper
Slice the cucumber and onion paper thin, and place in a colander. Sprinkle
generously with salt to leach out some of the liquid from the cucumber. Toss
occasionally, and allow to drain for an hour or more.
Mix the Equal, rice vinegar, and white pepper.
Place the cucumber onion mixture into a pretty bowl and toss with the dressing.
Allow it to marinate in the refrigerator for at least an hour.
