Bacon Gravy:
2 lbs. bacon
1 & 3/4 C flour
1/3 C sugar
One 12oz. can of cream (such as Milnot or Carnation)
6 C. Hot water
Salt & pepper to taste
Fry bacon in LARGE fry pan. (one that will hold about 8 C. of water) Remove
bacon & leave grease in pan. Turn heat to 'high'. Sprinkle flour on top of
grease & stir. Mixture should be 'pasty' & will brown quickly. Slowly
add can of cream, followed by 6 C. of hot water. Stir briskly to blend, &
then stir continuously to keep from scorching, until gravy comes to a boil &
starts to thicken. Add sugar & salt & pepper to taste. (If lumpy mix
with hand held electric mixer for about one minute before serving) Serve with
home-made or store- bought biscuits.
