Chocolate Gravy

1/2 C. Cocoa powder (like Hershey's)
2 C. all purpose flour
2 & 1/2 C Sugar
One 12oz. can cream (like Carnation or Milnot)
1 C. cold water
6 C. hot water
2 T. butter
1 tsp. vanilla

Mix (in a large dutch oven type 5 Qt pan), cocoa powder, flour, sugar. Slowly add 1 C. cold water till kinda pasty. Slowly add can of cream & mix well. Add 6 C. of hot water & cook on med/high heat stirring continuously to keep from scorching until mixture starts to boil & will start to thicken. (will thicken more as it cools) Remove from heat & add butter & vanilla. Set aside to cool & bake your favorite biscuits. (I use Southern Style biscuits off the Schwans truck, but Grands or any others will do as well) Right before you are ready to serve, remove the layer of 'skin' that has formed on top of the gravy. If the gravy is 'lumpy' try this trick: mix on low speed for one minute with electric hand mixer. *If you want the gravy to be sweeter or more 'chocolatey add more sugar or mix some cocoa powder with water & add to gravy. If too thick add more water or regular milk till consistency you want.
