Ruthie's Salsa
there are lots of recipes out on the web but here is the way I make mine....I just start chopping my tomatoes and that determines what amount of the rest of the stuff I put in...Today I had about 6 cups of chopped tomatoes...(I take the insides out and just use the outside part...no seeds etc..)Then I used a big...very big (burger sized) onion and chopped that up...and 5 very big cloves of garlic...(big ones, bigger than my thumb, John loves garlic) one hot pepper...It was a big jalepeno...normally I would add more than one pepper but I knew these suckers were really hot so I used only one but it was about5 inches long and bigger around than a quarter) and I used about 1/2 cup of cilantro...I love cilantro but that might be too much for some people...then I salted, added a little pepper and the juice of one lime...If I don't have lime I use lemon...one is as good as the other...at this point I stir and taste to make seasoning adjustments...more hot pepper etc...forgot to say that sometimes I add a little powdered cumin...I like the taste even though it has cilantro in it...cumin tastes a bit different...and I like tp add a little...it adds a depth to the flavor.
