Tuna Loaf
You must have fresh lemon for this~~
2 cans of water packed albacore tuna, drained and flaked
(you may sub. for equal amount of canned salmon)
1 can cream of celery soup
3 eggs, seperated
1 cup of bread crumbs
1/4 cup fine chopped onion
2 Tbs. chopped pimento
2 tbs. chopped parsley
juice of 1/2 of a fresh lemon
sliced lemon
Beat egg whites till stiff. Mix all ingredients , except the lemon slices
together, and fold gently into the egg whites. Arrange three or four lemon
slices on the bottom of a well greased loaf pan. Pour tuna mixture on top, and
bake at 350 for 1hr. or till set. Turn out loaf onto a platter, and serve
slices. Good with oven baked parsley potatoes and steamed peas.
