Feta stuffed tomatoes

4 beefsteak tomatoes
1 pack of feta cheese (about the size of a deck of cards)
1 rib of celery
2 green onions
1/4 cup cashew pieces
1 can small shrimp (Drained)
1 can sliced black olives (drained)
2 TBSP vinegar
olive oil
pepper to taste
pre heat oven to 350*
slice the tops off the tomatoes and scoop out and dice the insides
dice celery and slice green onions (whites and greens both) crumble feta and mix all ingredients except oil
place tomatoes in a baking dish or loaf pan that is just big enough to hold them (you want them snug so they don't tip) fill with Feta mix and brush the top lightly with oil. Sprinkle with pepper and bake for 1 hour.

If you have extra of the mix place it in the pan between the tomatoes to bake.

serves 4. This is very good with beef or chicken off the grill.
