German-Style Red Cabbage
2 tablespoons unsalted butter
2 yellow onions
1 small head red cabbage, shredded
1/4 cup sugar
5 tablespoons vinegar
1 teaspoons salt
Pepper to taste
3 apples, peeled and chopped
1/2 tsp. caraway seed (optional)
In a large deep pot, melt the butter and sauté the onion. Add the cabbage,
sugar, vinegar, salt, pepper, and apples. Reduce heat and simmer for 30 minutes.
Add the caraway seeds and serve hot.
