Harvard Beets:
Ingredients:
1 (14 oz.) can beets, drained, reserve liquid
1/4 cup sugar
1 Tbsp. cornstarch
1/4 tsp. salt
1/2 cup beet juice
1/4 cup cider or white vinegar
Instructions:
Dice the beets and set aside. In small saucepan mix sugar, cornstarch, salt,
beet juice and vinegar. Cook and stir over medium heat until it boils and
thickens. Add beets and heat through. Serves 4, but the recipes can de doubled
easily
