Ma's Chicken Stew
1 whole chicken cut up (about 3-4 pounds)
3 cloves of garlic (or more if you like)
1 medium onion
4 carrots
2 ribs of celery
1 small bag frozen corn
1 cups of beans soaked over night (your choice but I like white beans Ma uses
lima)
1 big bottle of V8 juice
salt pepper to taste
2 cups water
Cut chicken into pieces (legs, thighs, 2 breasts etc)
dice onion fine
In a heavy dutch oven fry garlic, onion and chicken together
add sliced carrots and celery cook until celery is translucent
add beans, corn, V8 and water simmer for 2 hours(or longer) add salt and pepper
before serving
