Stuffed Pepper Soup
2 lbs ground beef
1 (28o z) can tomato sauce
1 (28o z) can diced tomatoes, undrained
2 cups cooked converted or long grain white rice ( I just use Minute Rice)
2 cups chopped green pepper
2 beef bouillon cubes
¼ cup packed brown sugar
2 tsps. Salt
1 tsp pepper
In a large pan or dutch oven, brown the ground beef ; drain. Add remaining
ingredients; bring to a boil. Reduce heat; cover and simmer for 30-40 minutes
until peppers are tender.
