Veggie Borcht


Chop or slice and saute' lightly in a small amount of butter or olive oil-
1 small onion
1 celery stalk
3 med carrots
3 med potatoes
6 med beets

add water to generously cover the veggies and simmer until the veggies are tender. During the last 15 minutes or so of cooking add a good handful of shredded cabbage. Add salt and pepper to taste.

serve with a spoonful of sour cream- yummy!
